Today is April 20th (aka 4/20), a day which, besides being Hitler's birthday, many plates of nachos are consumed in an effort to stave off "the munchies." 

Nachos were invented in 1943 when the wives of American servicemen stationed in the border town of Eagle Pass, TX, crossed into Piedras Negras, Mexico for a day of shopping. By the time they were ready for dinner, the town's restaurant had closed.  But its owner agreed to serve them anyway and created a snack with what was left over in the kitchen -- tortillas, cheddar cheese and jalapeño peppers. He heated them up and nachos were born.

Different variations of the scrumptious dish have evolved over the years. Beans and olives, in particular, are now usually featured in nachos.
